Cheesy Thyme Potatoes

 

  • 4-5 large potatoes
  • 1/4 cup butter
  • 1 T grated onion
  • 1/2 tsp salt
  • 1 1/2 tsp fresh chopped thyme or 1/2 tsp dried thyme
  • 1/8 tsp pepper
  • Shredded cheddar cheese

Thinly slice potatoes and place in a greased shallow 2 quart dish. Heat the butter and onion in a saucepan until the butter is completely melted, then add the thyme, salt and pepper. Drizzle the butter mixture over the potatoes. Cover and bake at 425 degrees for 45 minutes or until potatoes are tender. Sprinkle with cheese and bake, uncovered, for another 15 minutes or until cheese is melted and bubbly. Serves 6.
