Ginger Carrot Soup

This delicately flavored soup is sure to please your taste buds. The sweet carrots, savory broth, and complex flavors of ginger and coriander come together to create a delicious soup that will please even the pickiest eater. It pairs well with a fresh sandwich or salad.

  • 2 T olive oil
  • 1 1/2 large onions, chopped
  • 2 lb. carrots, peeled and chopped
  • 1 inch piece fresh ginger, peeled and minced
  • 2 tsp ground coriander
  • 2 tsp celtic sea salt
  • 1/2 tsp pepper
  • 2 quarts (or more) chicken stock
  • Fresh parsley for garnish

In a large pot. sauté the onions, ginger, and carrots in the oil until onions are soft and translucent; add the seasonings: coriander, salt and pepper. Then add the broth and simmer until carrots are soft. Finally, place the mixture, small amounts at a time, in a blender and puree (or use an immersion blender). Garnish with fresh parsley if desired.
