Hands down, this is one of the best ways to eat fresh zucchini and summer squash. It’s wonderful grilled, garlicky flavor pairs well with steak and a baked potato or fresh salad.
- 2 yellow squash or zucchini, sliced lengthwise, 1/4-1/2 inch thick
- 1/4 cup extra virgin olive oil
- 1 clove garlic
- salt and pepper to taste
Heat the oil in a skillet over medium heat for a few minutes. Once warm, add the garlic and cook until it is fragrant and sizzling.
Preheat the grill for medium-high heat. Brush the yellow squash/zucchini slices with the garlic-infused olive oil and place oil slide down on the grill. Brush the other sides with the remaining oil and grill for 5-10 minutes per side, or until zucchini/yellow squash is soft. Remove from grill and sprinkle lightly with salt and pepper. Serve immediately.
