- 1 large eggplant, cubed
- 3 T olive oil
- 1/2 tsp salt
- Parmesan Cheese
- Onion powder, garlic powder or other desired seasonings, optional
Preheat oven to 400 degrees. Toss eggplant with oil, salt, parmesan cheese, and any other desired seasoning. Spread on a cookie sheet and bake for approximately 25 minutes, or until eggplant is soft. When eggplant is done, broil for a few minutes on medium-high to crisp.
