Looking for something with a little kick? This tangy carrot salad just might be the answer.
- 3 T olive oil
- 1 small garlic clove, minced
- 1 tsp fresh cilantro or parsley, minced (or a 1/4 tsp dried)
- 2 T apple cider vinegar
- Dash of cayenne pepper
- 2 1/2 cups grated carrots
Mix the first six ingredients in a small bowl or cup to make the dressing. Then pour the mixture over the carrots and toss to coat. Best if chilled for several hours before serving.
